"Eye Popping" Ribs - A Fun Halloween Dinner

These "Eye Popping" Ribs would make a Festive Halloween time dinner, or a fun meal any other time of the year!

I had a LOT of fun coming up with this recipe!  So much in fact, I left the house at 10:45 p.m. just to run to the store for a couple of things to make this recipe happen!  What I won't do for my blog...... ;)

I really wanted to make a fun dinner for my kids, but also one that would be fabulous even if it weren't Halloween.  This is it, folks!  

I had some frozen boneless country ribs in my freezer (because they go on sale frequently so I stock up!) and I know that apples go really well with pork.  So, I had this fun idea to make apple "eye balls" with my melon ball scooper (which I'm SO happy I purchased last year!)  I was a bit afraid the "eye balls" would turn to mush, but they didn't!  They held their shape!  Maybe it's because I left the peel on?  I don't know, but I just know it worked out the way I had envisioned and that's all that matters!  LOL

The Witches Brew, I've been wanting to try for some time now.  Of course, I took a taste first, so I knew what was going to be added to my crock to make this recipe realy "pop."  I decided a little sweet and savory was needed, so I chose to add brown sugar and some savory spices.  They were perfect!

I hope you give this recipe a try.  I served mine over rice, but you could serve it over some "brains" (pasta) instead if you wanted!  Have fun with it!

"Eye Popping" Ribs

Ingredients:
2 lbs. Boneless Country Ribs, FROZEN
1/4 cup brown sugar
1 Tbsp. Garlic Powder
1 Tbsp. Onion Powder
2 apples, "eye balls" cut out with a melon baller
2 cups Leelanau Cellars Witches Brew (this is wine)

Directions: (I used a 3 Quart Slow Cooker for this recipe)
Place the ribs into your crock.Add the brown sugar, garlic powder and onion powder.  Add your apple "eye balls!"  Lastly, pour your Witches Brew over your ribs and apple "eye balls."  Cook on LOW for 9-10 hours or on HIGH for 4.5-5 hours.  ENJOY!
