Decadent Sweet Potato Casserole ... Slow Cooker Style!

What better way to keep your kitchen cool and keep your sanity than using your slow cooker for the holidays.

Raise your hand if you're just a "little" bit stressed out about cooking for your holiday gatherings?!  It can be really daunting knowing how much you have to do to prepare.  Well, have no fear, Hope is here! 

Why not use your slow cookers and let them do the work for you? I know, why didn't you think of it?  It's ok, I won't tell!  Instead of slaving over the stove or oven, you spend time entertaining and enjoying your guests!

Sweet Potato Casserole is one of those "must have" dishes at our family gatherings!  It is a crowd pleaser for sure!  Adults like it because it's a great comfort food and kids....well, it has marshmallows on top, so they will definitely eat it!  You won't believe how easy this is to put together.

Decadent Sweet Potato Casserole

Ingredients:

2 apples, peeled, cored, sliced and chopped
4-5 Medium Sweet Potatoes, peeled and chopped1 stick butter, melted
1 tsp. vanilla
1/2 tsp. cinnamon
1/2 cup brown sugar
2 cups (about) Mini Marshmallows

If you like the idea of using your slow cookers for the holidays, here are a few other suggestions for you to try:

Directions:

 Place your apples in a bowl. Add your sweet potatoes to that.

Next, mix together the vanilla, melted butter and brown sugar.

Sprinkle the cinnamon onto the sweet potatoes and apples.

Pour your butter/vanilla/brown sugar mixture over your sweet potatoes and apples and mix.  Dump them into your crock.

Cook on LOW for 8-10 hours or on HIGH for 4-5 hours.

About 1-1 1/2 hours before serving, turn your slow cooker to HIGH. Take 3-4 paper towels and stick them underneath the lid of your slow cooker. This will help absorb a lot of the moisture and thicken your casserole.

About 5 minutes before serving, add your marshmallows to the top.  They will melt fast!
